Did you catch my vegan pumpkin banana bread recipe? It’s my most favorite banana bread recipe but. Even beats my almond butter one which I believed was fairly onerous to beat. Developed for yourfoodcollective

1 cup wholemeal spelt flour
½ cup buckwheat flour
1½ tsp baking powder
½ tsp baking soda
pinch salt
2 medium bananas or three small bananas
½ cup pumpkin puree
½ cup coconut sugar
¼ cup grapeseed oil (or different impartial oil)
2 TBSP almond milk ( if wanted)
⅓ cup pumpkin seeds
⅓ cup darkish chocolate chips
Technique
Take away the pores and skin and seeds of the pumpkin and minimize into giant chunks. Roast within the oven at 200 C till delicate and cooked via. I used half a medium Jap pumpkin to make ½ cup puree.
As soon as the pumpkin is cooked, puree in a meals processor till easy.
In a bowl mix the flours, baking powder, baking soda coconut sugar, and salt and blend to mix.
In a separate bowl, mash the bananas and blend with the pumping puree, oil, and milk.
Mix the pumpkin combination over the flour combination and blend nicely to mix.
Combine in pumpkin seeds and choc chips.
Switch batter to a lined or calmly greased loaf tin, sprinkle with further pumpkin seeds and bake for about 50 minutes – 1 hour or till a toothpick comes out clear
