Completely happy Thursday! I’ve handed in my final evaluation for the time period at uni and I’m feeling fairly bizarre not realizing what to do with myself tonight. 1¼ cup blanched almond meal
¾ cup wholemeal spelt flour (or sub any gluten-free flour of selection)
⅔ cup cacao powder
2 tsp baking powder

1 cup maple syrup

CHOCOLATE ICING:
2 TBSP avocado oil
2 TBSP cacao powder

Technique
In a big bowl combine the almond meal, flour, cacao powder and baking powder.
In a separate bowl combine the water, avocado oil, maple syrup and vanilla.
Pour the liquid combination over the dry and blend to mix.
Pour batter right into a greased 20 cm springform cake tin and bake for about 45 minutes at 180 C or till a toothpick comes out clear.
Take away from oven and permit to chill earlier than icing.
Combine the icing elements in a small bowl and pour over cake, clean with a spatula. Pop within the fridge for an hour to harden.
